Why ice is the ingredient nobody buys for

Ice chills and dilutes, and the dilution is part of the recipe. A properly made cocktail is roughly a quarter water by the time it reaches the glass, and that water is what makes a harsh mix of spirits drinkable. The trick is controlling the rate — which is entirely a question of surface area.
The counterintuitive rule: more ice, less watery
Almost everyone gets this backwards, and it is the single most useful thing on this page.
Put a small amount of ice in a shaker and it has to absorb all the heat from the drink on its own. It melts almost entirely doing so, and you end up with a lukewarm drink containing all of that meltwater. Warm and watery.
Fill the shaker properly and the same amount of heat is spread across far more ice. Each cube gives up only a fraction of itself, the drink chills quickly, and far less water ends up in it. Cold and correctly diluted.
So “go easy on the ice to avoid watering it down” produces exactly the outcome it is trying to avoid. Two-thirds to three-quarters full is the target.
Why size decides everything
Melting happens at the surface, where ice meets liquid. So the number that matters is surface area relative to volume, and that number changes dramatically with size.

That is the whole argument for a big cube in a whiskey glass: roughly the same ice, about half the melting, so the last mouthful is still a drink. And it is also why small cubes are correct in a shaker — there you want fast heat transfer, because the shake is over in fifteen seconds.
Different jobs, different ice. A household ideally has both, which is why the picks on this page are a large mold and an everyday tray rather than one of them.
Where clarity actually comes in
Clear ice looks better, and that is most of the reason to want it. But there is a second-order benefit that is real: ice made by directional freezing is denser and more uniform than freezer-tray ice, which is riddled with trapped air. Denser ice melts more predictably and does not fracture as readily when a warm spirit is poured over it.
The practical ranking, then: large and cloudy beats small and clear, and large and clear is best of all. If the budget is tight, buy size first. Clear ice costs nothing if you have a cooler.
What this means for buying
Ice is the ingredient nobody thinks of as a gift, which makes it the most reliably surprising thing in this category and the least likely to be a duplicate. It is also, dollar for dollar, the most visible change you can make to somebody’s drinks.

The math
- Surface area against a standard cube: Roughly a third less per unit volume
