Two specifications decide an ice bucket: a double wall and a lid. A single-wall bucket sweats a ring onto the furniture and lets heat straight through to the ice. An open bucket lets the surface melt and refreeze into one fused block. Everything else about a bucket is finish.
Why the double wall is not a luxury
A single-wall metal bucket full of ice is a condenser. The outside drops below the dew point, water forms on it, and it runs down onto whatever the bucket is standing on. On a wooden sideboard that is a permanent ring; on a bar cart it is a puddle on the shelf below.
The same physics that produces the condensation is heat flowing inward through the wall, which is what melts the ice. A double wall traps a layer of air between two skins and largely stops both problems at once.
Why the lid matters more than it looks
Most buckets are sold without one, and it is the more common omission of the two.
An uncovered bucket lets warm air sit directly on the ice surface. That surface melts, the water runs down between the cubes, and it refreezes lower in the pile — which is how a bucket of loose cubes becomes a single fused block that has to be attacked with a spoon halfway through the evening.
A lid slows the whole process. It is a small piece of steel and it is the difference between serving from a bucket at 10pm and chipping at one.
The size question, with arithmetic
Two liters is about 68 fluid ounces of volume. Loosely packed ice fills a vessel at roughly half its volume in actual ice, and a drink takes four to six ounces of cubes.
So one filling services roughly eight to ten drinks before somebody walks back to the freezer. For a household of two having four people round, that is the whole evening. For a larger party it is one round, and at that point the honest recommendation is a machine rather than a bigger bucket. Which machines, and whether it is worth it.
Who should skip this entirely
Anyone who makes one drink at a time on a weeknight. The freezer is four feet away, it is colder than any bucket, and the bucket will live in a cupboard.
An ice bucket earns its place purely on how often a household has people round. If they do, it is one of the more useful things on a bar cart — a cart with no ice on it sends the host to the kitchen mid-round, which is the most common gap in a home setup. What else belongs on a cart.
